Summer in Spain is really hot and food has a huge impact on how your body reacts to the temperatures. You better forget about heavy meals and go for light, refreshing food that will keep you hydrated and that your body will process more easily. Here are some ideas of meals you could opt for this summer (if you haven’t already).
Hawaiian Chicken Pineapple Kabobs-A delightful sweet and salty dish full of exoticism. It’s all about the contrast for that crunchy and juicy recipe. Made of cooked chicken, pineapple and vegetable, this dish is a great mix of flavors to please all the taste buds. Just put the ingredients on a skewer and then have them grilled. You have many options for the seasoning: honey, brown sugar, vinegar, soy sauce, ginger, garlic etc.
Bruschetta-A simple Italian appetizer that can be made in a few minutes. First, you need some toasted bread. Drizzle it with olive oil and add a little bit of salt and pepper to it. Then you can incorporate chopped tomatoes, onions and some fresh herbs such as garlic and basil.
Zucchini Parmesan Crisps-Crisps are simply addictive and one of the essentials when partying or watching a movie. However, you might want to opt for a healthier version of this snack this summer. The preparation is simple. Slice the zucchini, dip them in olive oil and then sprinkle them with grated parmesan, bread crumbs and salt and pepper. After 30 minutes in the oven to 200 degrees C, you will be able to enjoy these crispy chips.
Gazpacho-You’ve probably heard of gazpacho, a famous soup made of vegetables, bread and olive oil that finds its origins in the South of Spain. It’s perfect for the season as it is served cold and as it tastes so refreshing. It also contains a lot of vitamins and is low in calories so go for it if you want to keep fit and healthy! Plus, it has so many variations. Although we all know about the tomato version, this now key ingredient was actually added in the 19th century. Other ingredients issued from modern recipes include avocados, grapes, meat, watermelon, seafood etc. You can also make it more or less thick depending on the ingredients you pick and how much bread you add in.
Mango Chicken LettuceWraps-Wraps are very common but here is a way to make them healthier and more original! Instead of the usual flatbreads, go for lettuce leaves. For the filling, prepare a mix of cooked chicken, mango, jicama, chili sauce, oil, mint and lime juice. You will obtain the least boring wrap you have ever eaten.
Niçoise Salad-There is of course an infinite variety of salads you could make but we have chosen to talk about the famous French salad from the city of Nice. It is quite simple to make and contains all the nutrients you need! Start by mixing the following ingredients: mixed greens, quartered cooked eggs, cherry tomatoes, olives and tuna. Then proceed to the making of the Shallot vinaigrette that will be drizzled over the preparation. Mix olive oil, mustard, vinegar, lemon juice, shallot, sugar and salt and pepper.

Sweets and treats
Homemade fruit sorbet-There is nothing as good as ice-cream in the summer. However, sorbet is the healthiest and most refreshing option you could choose. It’s also vegan! Lucky for you, it is so easy to make and comes in all flavors. Just pick some fruits, make a puree of it, add some sugar and put it into the freezer. Be careful on the amount of sugar you use as not enough would make it too icy and too much would make it slushy. Unleash your creativity! Think of all the delicious fruit combinations you could make (mango and apple, strawberry and blueberry, pear and vanilla etc.). If you want more flavors, you can also add in some liquor, herbs or spice (cinnamon, cumin…).
Pana Cotta with fruits-A fresh Italian dessert that is well-known all over the world and that only requires a few ingredients. Put milk and gelatin in a saucepan, heat it so that the gelatin dissolves but do not let the milk boil. Add some whipping cream, sugar and vanilla and remove from the heat. Once it has been in the refrigerator for at least 6 hours you can choose and add your topping: red fruit coulis, berries or even melted chocolate.
Fruit mousse-Is there anything as light as a fruit mousse for the summer? Plus there’s nothing as easy and quick to make. All you need is three ingredients and your dessert will be ready in only five minutes. Pick your fruits, put them into the food processor with some sugar and then add egg white. You will obtain a fluffy mixture to eat right away or to put into the fridge a few hours before tasting.
Shakes-Shakes offer a great diversity as you can make innumerable mixes. Here is a recipe for a shake full of proteins, ideal after a workout. All you have to do is blend a banana, two tablespoons of natural peanut butter and 30 cl of milk or yogurt.

Cocktails-Cocktails are the perfect summer drink to enjoy on the beach or at a sunny terrace. One of the most famous is Margarita, the Mexican originated drink made with tequila.Many recipes have been explored whether using gold or silver tequila, adding mango or grapefruit etc. An easy way to make Margarita would be to mix silver tequila, Cointreau, lime juice and salt and ice. You can also add some agave syrup if you want a sweeter version.
